Delicious Fall Harvest Recipes
Creamy Pumpkin Smoothie
Serves 1
Ingredients:
- 1 scoop of vanilla protein powder
- ½ banana
- ¼ cup pumpkin puree
- 1 cup of greens (kale or spinach work best)
- 1 cup of unsweetened coconut milk
- ½ teaspoon pumpkin pie spice (optional)
Directions:
- Add all ingredients into blender and blend on high for one minute, until creamy and smooth.
Nutritional analysis: calories 320, far 11g, carbohydrates 40g, fiber 12g, protein 23g
Carrot and Turnip Soup
Serves 4
Ingredients:
- 1 tablespoon grape seed oil
- 2-3 garlic cloves
- 1 cup cooking onions, chopped
- ½ cup celery, chopped
- 2 cups carrot, chopped (leave skin on for extra nutrients)
- 2 cups parsnip, chopped
- 4 cups of low sodium vegetable (or chicken) broth
- 2 teaspoons paprika
- ½ teaspoon chili powder
- ¼ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
Directions:
- Heat oil in large pot over medium to high heat. Add onions, garlic and celery and cook until onions are translucent.
- Add the carrots and parsnip and cook for another 2 minutes.
- Add vegetable stock and mix together.
- Bring mixture to a boil and cook covered for 20 minutes, or until the vegetables are soft. Add paprika, garlic powder, chili powder, sea salt and pepper.
- Allow soup to cool, and once cooled, put into a blender. Blend until smooth. Heat soup up and serve warm.

Harvest Super Food Kale Salad
Serves 6
Ingredients:
- 1 cup of kale, stems removed and finely chopped
- 1 cup broccoli, chopped
- ½ cup purple cabbage, finely chopped
- 2 apples, cut into 1-inch pieces
- 1 cup Brussels sprouts, finely sliced
- 1 cup quinoa, cooked
- ½ cup pomegranate seeds
- ½ cup pumpkin seeds, unsalted
- ½ cup freshly squeezed lemon juice
- 3 tablespoons honey
- 1 tablespoon cilantro, coarsely chopped
- 2 teaspoons apple cider vinegar
- 2 teaspoons Dijon mustard
- ½ cup extra virgin olive oil
- Pinch of sea salt and freshly ground black pepper
Directions:
- In a large mixing bowl, combine kale, broccoli, cabbage, apples, Brussels sprouts, cooked quinoa, pomegranate seeds, and pumpkin seeds. Toss to combine.
- In a small separate bowl, add lemon juice, honey, cilantro, apple cider vinegar, mustard, olive oil and sea salt and pepper. Whisk together until well combined. Drizzle the dressing over salad and toss to coat.

Spicy sweet potato curls
Serves 2
Ingredients:
- 2 medium sweet potatoes
- 1 tablespoon extra virgin olive oil
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper (or less if you don’t want it too spicy)
Directions:
- Preheat oven to 350 F.
- Wash sweet potatoes and cut in half lengthwise.
- Using a spiralizer, shape the sweet potatoes into curls.
- Put spiralized potatoes into a bowl and add olive oil, paprika and cayenne pepper. Toss well to coat the potatoes.
- Lay the coated sweet potato curls onto a parchment lined baking sheet and put in pre-heated oven for 20-30 minutes, until cooked. Switch to broil for the last 5 minutes for crispy sweet potatoes.
