Delicious Summer Recipes!
Summer fresh berry smoothie
Serves 1
Ingredients:
- ½ cup frozen mixed berries (i.e., strawberries, blueberries, raspberries, blackberries) – tip: when buying frozen fruit, make sure there is no added sugar (check the ingredient list!)
- 1 cup unsweetened almond milk or coconut milk
- ½ cup 2% plain Greek yogurt
- 1 tablespoon chia seeds
- 1 cup spinach or kale
Directions:
Place all ingredients into blender and blend on high until smooth and well combined - 30 seconds - 1 minute.
Nutritional analysis: calories 250, fat 9g, carbohydrates 23g, fiber 8g, protein 17g
Greek quinoa salad
Serves 5
Ingredients:
- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon red wine vinegar
- ¼ teaspoon dried oregano
- 1 clove garlic, smashed and finely chopped to a paste
- Sea salt and freshly ground black pepper
- ¼ cup extra-virgin olive oil
- 2 cups cooked quinoa
- 2 cups red cherry tomatoes
- 1 cup pitted black olives
- 1 small red onion, halved and thinly sliced
- 1/2 cucumber, cut into small dice
- ½ cup feta
Directions:
- Whisk together the lemon juice, vinegar, oregano, garlic and some sea salt and pepper in a small bowl. Slowly whisk in the oil until emulsified. Set aside.
- Add cooked quinoa to a large bowl along with tomatoes, olives, red onions, and cucumber. Add dressing and toss to coat. Cover and refrigerate for at least 1 hour.
- Sprinkle with feta just before serving.
Nutritional analysis per burger: calories 430, fat 21g, carbohydrates 52g, fiber 7g, protein 13g
Mock potato salad
Serves 2
Ingredients:
- 1 head of cauliflower cut into ¼ inch-1/2 inch pieces (similar to chunks of potato in potato salad)
- 2 tablespoons Dijon mustard
- 2 tablespoons low fat mayonnaise
- 2 organic hard boiled eggs, sliced
- 1-2 stalk green onion, finely chopped
- ½ teaspoon Herbamare or spices/seasonings of your choice
- Sprinkle of paprika
Directions:
- Blanch cauliflower in boiling water for about 5 minuets then remove it and place in colander and run cold water to stop the cooking process. Let it sit in colander and drain.
- In small bowl, combine mustard and mayonnaise and whisk together.
- Add sliced hard-boiled eggs into separate medium bowl. Add drained cauliflower, onion and toss with the dressing.
- Add seasonings as desired.
Nutritional analysis per serving: calories 160, fat 10g, carbohydrates 10g, fiber 4g, protein 9g
Black bean brownies
Serves 16
Ingredients:
- 1 (15-ounce) can no-salt-added black beans, drained and rinsed thoroughly
- 3 organic eggs
- 1/3 cup coconut oil, melted
- ¼ cup unsweetened cocoa powder
- 1/8 teaspoon sea salt
- 2 teaspoon vanilla extract
- ½ cup plus 2 tablespoons coconut sugar
- ½ cup dark chocolate chips
- 1/3 cup walnuts, finely chopped
Directions:
- Preheat oven to 350°F.
- Oil an 8-inch baking pan and set aside.
- Add black beans, eggs, melted coconut oil, cocoa powder, sea salt, vanilla, and coconut sugar until food processor and blend until smooth.
- Remove the blade and carefully stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan. Bake the brownies for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares.
