Delicious Spring Recipes
Matcha almond milk latte
Serves 1
Ingredients:
- ½ teaspoon matcha powder
- 1 tablespoon hot water
- 1 cup unsweetened almond milk (steamed or foamed)
- 1 teaspoon honey
- ½ teaspoon cinnamon (optional)
Directions:
- Add matcha powder and hot water into mug and whisk together.
- Add steamed/foamed almond milk, honey and cinnamon to mug.
- Mix together and enjoy hot!
- Nutritional analysis: calories 74, fat 4g, carbohydrates 11g, fiber 3g, protein 1g
Spring detox smoothie
Serves 1
Ingredients:
- 1 cup unsweetened almond milk or coconut water
- 1 cup kale or spinach
- ¼ fresh or frozen banana, roughly chopped
- ¼ cup frozen mango
- 1 scoop vanilla or unflavoured protein powder
- 1 tablespoon ground flax seeds
- 1 inch piece of fresh ginger root
Directions:
Add all ingredients into blender and blend on high until smooth, about 30 seconds.
Nutritional analysis: calories 306, fat 8g, carbohydrates 34g, fiber 6g, protein 28g
Kale pesto spread
Serves 12
Ingredients:
- ½ cup pine nuts
- 2 cups firmly-packed fresh kale
- 1 cup fresh basil
- 3 garlic cloves
- ½ teaspoon sea salt
- ¼ cup parmesan cheese, grated
- 2 tablespoons – ½ cup extra virgin olive oil
Directions:
- Place pine nuts in a dry skillet, and toast until golden brown, about 3 minutes.
- Place kale and bay leaves in a food processor and add pine nuts, garlic and salt. Pulse until kale is finely chopped.
- Add cheese, and pulse until cheese is mixed through. Do not puree or over process.
- Drizzle in olive oil, and continue to pulse until the pesto reaches the desired texture.
Nutritional analysis: calories 119, fat 12g, carbohydrates 2g, protein 1g
Easy and delicious 5-minute salmon recipe
Serves 1
Ingredients:
- 3-5 oz piece of salmon
- 1 teaspoon extra virgin olive oil
- 1 garlic clove, minced
- 1 tablespoon red onion, diced
- ½ tablespoon capers
- 1 tablespoon fresh dill, chopped
- 2-3 cherry tomatoes, halved
- Sprinkle of sea salt
- ½ lemon
Directions:
- Pre heat oven to 350 F.
- Place salmon on baking sheet lined with parchment paper and drizzle with olive oil. Top with garlic, onion, capers, dill, and tomatoes. Sprinkle with sea salt and squeeze fresh lemon juice over top.
- Put fish into pre-heated oven for 15-20 minutes, until fish is cooked through and flakey.
Nutritional analysis: calories 210, fat 8g, carbohydrates 21g, fiber 5g, protein 19g

- Go cold - Read your labels and listed ingredients - if you canÂ’t read it, ditch it!
- Lighten up your dinner - Add flax seeds, fiber buds, and nuts and seeds to help fill you up, keep you full and stabilize blood sugar levels throughout the day.
